What Is a Certified Food Protection Manager?

The credential your health inspector is usually asking about: what it proves, who needs it, and how the accredited exam works.

A Certified Food Protection Manager (CFPM) is a person who has passed an exam accredited to the Conference for Food Protection (CFP) standard, showing they understand how to keep food safe in a commercial operation. It is the credential health inspectors usually mean when they ask whether the person in charge is "certified."

What the certification actually proves

The exam is not about recipes or customer service. It tests whether you can run a kitchen without making someone sick:

  • Time and temperature control — cooking, cooling, reheating and hot/cold holding
  • Employee health and hygiene — handwashing, glove use, and when a sick employee must be excluded or restricted
  • Preventing cross-contamination and managing the major food allergens
  • Cleaning versus sanitizing, sanitizer concentrations and contact times
  • Receiving, storage, date marking and the flow of food through your operation
  • Facilities, pest control, and HACCP fundamentals

Why accreditation matters more than the brand name

Health departments do not usually name a company. They point to an exam accredited by ANAB (the ANSI National Accreditation Board) against the CFP standard. Several providers hold that accreditation, and they are treated as equivalent credentials. The exam we proctor — Always Food Safe — is one of them. So is ServSafe®, which is why you will see the two described as interchangeable at the manager level. Before you pay anyone, look their program up in ANAB's directory of accredited certificate programs. If it is not listed, your health department may not accept it.

Manager certification is not a food handler card

A food handler card is short, cheap crew-level training. Manager certification is a proctored, accredited exam for the person responsible for the operation. One does not substitute for the other. See Food Manager vs Food Handler.

Who needs to hold it

This is set locally, not nationally. Many jurisdictions require at least one certified food protection manager per establishment, and some require one on site during all hours of operation. The FDA Food Code is the model most states adapt, but your state or county sets the actual rule — confirm it with your local health department before you assume how many certified managers you need.

How long it lasts

Manager certification is typically valid for five years. Some jurisdictions set a shorter renewal cycle, so check locally rather than assuming five.
