Shift work, not office hours

Seafood operations: certification is not the whole picture
We want to be straight about this, because it affects Hampton more than most cities. Passing the manager exam demonstrates the knowledge the regulation asks for. It does not create the shellfish tags, temperature logs, and source records your inspector will want to see. Operators who treat the certificate as a substitute for those records still fail inspections. Certify the manager, then ask the health district what documentation it expects.
Certify the person in charge, train the rest
The regulation needs one certified food protection manager with real supervisory authority. Everyone else is better served by food handler training at $19, which takes about 90 minutes. What the rule actually says
Food establishments in Hampton are inspected under the Virginia Food Regulations. The certified food protection manager requirement, 12VAC5-421-55, reads:
"At least one employee with supervisory and management responsibility and the authority to direct and control food preparation and service shall be a certified food protection manager, demonstrating proficiency of required knowledge and information through passing a test that is part of an accredited program."
The regulation also exempts some establishments — those serving only non-time/temperature-control-for-safety food, and those that only reheat or cold-hold commercially processed, fully cooked foods (and do not cool them). What we can't tell you
We have not verified a Hampton city requirement that adds to the state's certified food protection manager rule, and this page does not claim one. Hampton does have two situations we genuinely cannot resolve from here: kitchens on federal installations, which may be inspected federally rather than by the state health district, and seafood operations, where source tags and records are enforced on top of the certification requirement.
